2 Tablespoons Extra Virgin Olive Oil
1 Tablespoon Tomato Paste
1 can Black Beans 16 Oz Size
1 cup Jasmine Rice
2 cups Chicken Stock Or Broth Or Water
1 teaspoon Smoked Paprika
1 teaspoon Cayenne Pepper (Optional)
1 teaspoon Salt To Taste

Remove casings from sausage and chop into bite size pieces.

Turn pressure cooker to brown, add some olive oil and brown the meat for 2 minutes, stirring occasionally.

Add the tomato paste, give the meat a couple good stirs to combine and then turn off heat.

Open can and drain and rinse beans.

Add to the meat thats resting in the pressure cooker.

Add the rice to the cooker and stir to combine.

Pour the stock or water into the pressure cooker, season with the paprika and the optional cayenne pepper and give it one last stir.

Place the lid on and lock, set pressure to 50 and cook for 15 minutes.

Release steam, season with the salt and pepper if desired and enjoy!
