Ingredients: 1 1/2 lb. fresh mushrooms; juice of 1 lemon; 1 clove garlic, minced; 1/4 tsp. freshly ground pepper; bibb lettuce; parsley sprigs; 1 tsp. vinegar; 2 Tbsp. mayonnaise; 1/4 tsp. salt; tomato slices

Clean mushrooms; wash in cold water to which vinegar has been added.

Dry in a cloth; slice.

To keep mushrooms from turning black, sprinkle with lemon juice.

Toss lightly but thoroughly with mixture of mayonnaise, garlic, salt and pepper. Place in refrigerator for 1 or 2 hours; mixture will become moist from juice of mushrooms.

Stir lightly several times during chilling. Serve on a bed of bibb lettuce and parsley.
