Lift dough onto a floured surface and continue to work in flour as long as needed; roll out dough until it is very thin. Let set 20 to 30 minutes. Roll up and with a sharp knife, cut 1/8 inch strips, starting at one end of the roll. This makes enough for 2 meals for a small family. Allow the extra noodles to dry completely and store in a covered jar until needed. Drop the (two day) noodles into boiling broth (chicken or beef) and cook for about 10 minutes.
