Ingredients: 100 grams Dried apricots; 100 grams Dates; 50 grams Pistachio nuts; 1 tsp Cumin seed; 1 tsp Coriander seed; 1 pinch Salt and pepper; 1/2 tsp Dried ginger; 2 Cloves; 1/2 tsp Cinnamon; 2 Dried red chillis; 1 bunch Fresh parsley; 1 dash Olive oil; 2 Bay leaves; 2 tbsp Brandy; 1 tsp Honey; 2 clove Garlic

100 grams Dried apricots
100 grams Dates
50 grams Pistachio nuts
1 tsp Cumin seed
1 tsp Coriander seed
1 pinch Salt and pepper
1/2 tsp Dried ginger
2 Cloves
1/2 tsp Cinnamon
2 Dried red chillis
1 bunch Fresh parsley
1 dash Olive oil
2 Bay leaves
2 tbsp Brandy
1 tsp Honey
2 clove Garlic

Finely Chop the apricots and put into a bowl, pot over the brandy and leave for half hr so it soaks up.

In a pestle and mortar, grind the cumin and coriander seed, and the cloves, add to the bowl.

In the pestle and mortar, roughly mash up the pistachios, add to the bowl.

Finely chop the dates, chilli, garlic and parsley and add to the bowl with the rest of the ingredients, mix well.

Leave to marinate for approx 2 hours, then stuff your lamb joint before roasting.
