Take the sugar & water in a thick bottomed pan. Heat it over medium heat without stirring. When sugar begins to melt, tilt the pan gently so that the sugar is melted evenly. Heat till sugar caramelizes - turns golden brown. Pour the caramel into the pudding mould & tilt & rotate gently so that the caramel spreads evenly. Set aside to cool a bit.

Heat milk till warm over gas or in microwave.

In a separate bowl break the eggs, add the sugar & flavor of your choice & mix gently with a whisk.

Add the warm milk & mix gently. Strain. Pour the strained egg-milk mixture into the mould (over the caramel). Do not stir! Cover the mould with a lid. Close with the cooker lid. Pressure cook upto 3 whistles.

Alternatively, you could cover the mould with a lid or aluminium foil & place in cooker. Close with the cooker lid & steam for 25 to 30 mins till done.
