Ingredients: 3 tbsp vegetable oil; 4 lb chicken; 1 each chopped onion; 1 each green bell pepper; 3 clove garlic; 2 tbsp chili powder; 2 tsp ground cumin; 1/2 tsp ground cinnamon; 1 can 14oz can dice tomatoes; 1 cup chicken broth; 1 cup dark Mexican beer; 1/4 cup raisins; 2 each chopped chipotle peppers in adobo sauce; 2 tbsp creamy peanut butter; 1 tbsp sugar; 1 tsp salt; 2 each squares of unsweetened chocolate chopped

3 tbsp vegetable oil
4 lb chicken
1 each chopped onion
1 each green bell pepper
3 clove garlic
2 tbsp chili powder
2 tsp ground cumin
1/2 tsp ground cinnamon
1 can 14oz can dice tomatoes
1 cup chicken broth
1 cup dark Mexican beer
1/4 cup raisins
2 each chopped chipotle peppers in adobo sauce
2 tbsp creamy peanut butter
1 tbsp sugar
1 tsp salt
2 each squares of unsweetened chocolate chopped

Heat oil in large skillet over medium heat add chicken in batches cook 5 to 7 minutes or until browned on all sides place in large baking pan set aside

Add onion bell pepper and garlic to skillet; cook and stir 5 minutes or until vegetables are softened.

Stir in chili powder, cumin and cinnamon; cook 5 minutes.

Add tomatoes, broth, beer, raisins, chipotle peppers, peanut butter, sugar and salt; bring to a simmer cook and stir 20 minutes.

pour vegetable mixture and chocolate into food processor or blender; process until smooth.

Preheat oven to 350.

Pour sauce over brown chicken pieces.

Cover pan loosely with foil bake 45 minutes or until chicken is cooked through 165.
