Preheat oven to 350 degrees and spray a 9 x 12 casserole dish with nonstick spray.

Brown your ground meat in a skillet and add the taco seasoning as per the directions on the packet.

I have also made this for a vegetarian meal and used tofu prepared in the same way (just sub it for the meat).

Or, you could add two more cans of your favorite type of beans and omit this step altogether.

Drain and rinse the cans of beans.

Drain the can of Rotel.

Slice the avocado into thin strip and sprinkle with the lime juice.

You are now ready to assemble you casserole sized burrito!

Start with the cooked rice and spread it evenly on the bottom of the casserole dish.

Add the ground meat, beans, and Rotel on top of this.

Now, if you are like me and really enjoy salsa, add the entire jar of salsa as the next layer.

If not, add about 1/2 to 3/4 of the jar.

Next layer the thin slices of avocado and cover as much of the salsa as possible.

Crush up the tortilla or Sun chips (I like the garden veggie variety) and crumble these over top of the avocado slices.

This will add a nice crunch and different texture to the top of the casserole.

Finally, sprinkle the 2 cups of cheese over the top.

Bake in the oven until the cheese is melted and bubbly about 30 minutes.

Serve with a dollop of sour cream and enjoy!
