Mixed Vegetable Tempura – a delicious recipe with water, egg, flour, cornflour, salt, broccoli. Easy to follow and perfect for any occasion.

Chill the water and the egg.

Whisk together all the batter ingredients just before dipping the food.

The batter should only just be amalgamated so that a few small lumps of flour are still apparent.

Get a pan of oil hot.

If you are organised enough to have a kitchen thermometer the oil should register about 190 degrees C/375 degrees F.

Dip the vegetables into the batter then into the hot oil.

Cook them until golden turning from Ume to time with a fork.

They will probably bob back up again but keep trying.

Cook them for a couple of minutes on each side.

Drain on kitchen paper and eat straight away with the lemon wedges.
