Mini Chicken Meatballs

   Saute the onion and garlic for 3 minutes on medium heat in a pan with a little olive oil. Add the whole tomatoes, broth, pepper, parsley and salt to taste.

   Blend the mixture for 20 seconds in the blender and return to the pan. Taste to see if more salt is needed and simmer on low heat.

   Mix the chicken with the oatmeal, egg, salt and a dash of pepper in a bowl. Form small balls about the size of a walnut and add them to the pan.

   Cook on low heat, covered, until the meatballs are cooked through, approximately 10 or 15 minutes.
