Mexican Hominy

   Saute onion in small amount of oil.

   Saute meat and add hominy, tomato soup, Ro-Tel tomatoes, cheese, garlic, salt and pepper.

   Let stand overnight.

   Bake, covered, at 350u00b0 for 1 hour. Uncover and bake 30 to 45 more minutes.

   Use Parmesan cheese on top.

   Serve with tossed salad and garlic bread.
