Meatloaf Muffins

   Preheat oven to 350u00b0.

   Heat olive oil over medium heat and saute pepper, onion and garlic until just softened, remove from heat and cool.

   Combine pepper-onion mixture with all remaining ingredients except marinara sauce. Divide meat mixture evenly into 12 muffin tin that has been coated with cooking spray. Spread marinara sauce over each muffin. Bake for 22 to 30 minutes, or until meat is no longer pink.

   Remove from oven and let rest for 5 minutes before serving.
