2 tsp. grated lemon rind
2 Tbsp. lemon juice

2 lb. boiling potatoes (about 6)
2 Tbsp. margarine
1/4 c. milk
3 Tbsp. flour
1/2 c. water
1 pkg. (10 oz.) frozen peas
2 Tbsp. chopped parsley
