In a large bowl mix together the masa harina, flour, baking soda, baking powder and salt. In a separate bowl whisk the eggs and then whisk in the vanilla, milk, buttermilk and melted butter. Combine the buttermilk mixture into the flour mixture and whisk until completely combined.

In a separate bowl fold together the mascarpone cheese, lemon zest and lemon juice until combined then put the bowl into the refrigerator to chill.

Heat a griddle or a large saute pan on medium heat with about 1 ounce of butter. When butter is melted pour a small amount of pancake batter onto the griddle with a ladle (cook as many as you can fit at one time, but make sure and leave space between) and cook until brown on both sides (2 to 4 minutes) and cooked throughout. Remove cooked pancake(s) from the griddle to a plate and cover with a sheet of foil to keep them warm. Repeat cooking the rest of the batter.

Serve the pancakes with a small amount of the lemon mascarpone and drizzle on honey.
