2. Using the same pan, add in the butter, and then shallots, garlic & red pepper flakes, and cook until fragrant.

3. Add the can of fire roasted tomatoes to the pan, cover & let simmer on med/low for 10 mins.

4. While sauce is simmering, bring a large pot of water to boil with a pinch of salt. Add in the fresh pasta & cook for 3-4 mins. Drain & set aside.

5. Now the fun & easy part! In the same large pot, add the sauce, cooked sausage meat, pasta & mix with the cheese!
