1 (750-ml) bottle dry white wine
1/2 cup white wine vinegar
2 tablespoons honey
1 tablespoon black peppercorns
2 tablespoons dried coriander seeds
1 teaspoon juniper berries
2 bay leaves
1 cup sour cream or creme fraiche
1 cup minced fresh dill
1/4 cup prepared horseradish

Rinse the mackerel fillets and pat them dry.
