Heat oven to 425.

Line a baking sheet with parchment paper.

Fry bacon until crisp. Drain on a paper towel and blot when cool. Chop finely. Set aside.

Combine egg, milk and maple syrup. Mix flour, salt & baking powder in a separate bowl. Cut the butter into the dry mixture until the mixture looks like sand. Next, stir in the egg mixture (leaving 1 tablespoon of the egg mixture in measuring cup). Combine liquids with flour mixture, adding more flour if needed. Turn onto a floured board and knead in bacon. Pat it out until it is about 1-2 inches thick. Cut into wedges or use a biscuit cutter.

Brush the tops with the reserved 1 Tablespoon of egg mixture. Bake for 14-16 minutes until golden on top.
