Ingredients: 4 tbsp canola oil; 1/2 cup cornmeal; 1/4 tsp cumin; 1 tsp garlic powder; 1/2 tsp black pepper; 1 medium carrot or 6 baby carrots-- chopped; 2 stalk celery, chopped; 1/2 tsp chili powder; 1 add desired herbs -- basil, cilatro, etc, to taste.; 2 med, red potatos-- chopped; 1 small onion-- chopped; 4 cup stock -- i use chicken; 1 can , 10 oz tomato sauce; 1 small can green chilies-- optional; 1 can black beans, optional; 2 13 oz cans chicken, optional

4 tbsp canola oil
1/2 cup cornmeal

add oil to cast iron skillet heat until a sprinkling of water dances

put cornmeal in skillet, stir until meal is golden in color

add tomato sauce + 2 cans of water

add all veg, cook on med heat until tender

add all spices and seasonings

add stock, cook for 15 min

serve hot with crispy tortilla strips
