Yield: 4 servings
Ingredients: salt; 5 tablesspoons unsaled butter; 2 cups bread crumbs; 5 cups grated sharp cheddar; 3 tablespoons flour; 1/2 teaspoon red pepper flakes; 2-3/4 cups whole milk; 3/4 cup heavy cream; 2 teaspooons dijon mustard; freash ground black pepper; 3/4 lb. elbow macaroni

1. preheat th eeoven to 400 degrees.

2. in medium pan melt 2 tablespoons of butter . Add the bread crumbs and 1 cup of the cheese and stir until combined. Set aside.

3. In saucepan over medium heat melt remaining butter. Stir in flour and red pepper flakes and reduce heat to low. Cook stiriring constantly for 3 minutes. Whisk in the milk and raise heat to medium. Simmer, whisking occaissionaly, for 3 minutes. Stir in the cream, remaining cheease, mustard, 1/4 teaspoon black pepper and 1-1/2 teaspoon salt.

4. Cook Macaroni until al dente. Reserve 1 cup of the cooking waterbefore draining. In a large bowl combine the macaroni, cooking water and sauce. Transfer to a baking dissh and spread evenly with the topping. Bake until golden 20-25 minutes.
