Remove from heat, then with a slotted spoon lift out the vegetables and place in a food processor or blender; process until smooth, about 15 to 30 seconds. Return mixture to skillet and place over high heat.

Stir in the cornbread and continue cooking about 2 minutes, stirring occasionally.
