2 tablespoons olive oil
1 large yellow onion, small dice
1 cup carrot, small dice
¾ cup celery, small dice
3 -4 garlic cloves, minced
½ teaspoon celery seed
1 teaspoon dried thyme
½ teaspoon dried rosemary, crushed
½ teaspoon ground black pepper
1 -2 tablespoon mirin (water is an ok substitute)
6 cups vegetable broth
⅓ cup pearl barley
1 (15 ounce) can chickpeas, drained and rinsed
2 tablespoons mellow brown rice miso

In a soup pot over medium heat saute onions, carrots, and celery in oil for about 10 minutes.

Add garlic, dried herbs, and spices.

Saute for another 5 minutes.

Deglaze pot with mirin.

Lower to simmer for about 45 minutes or until barley is cooked.
