Preheat oven to 350u00b0F. Grease cookie sheet with cooking spray.

In a large bowl, beat granulated sugar and butter with electric mixer on medium speed. Add egg, beat well, then add vanilla, baking soda, and baking powder. Beat until smooth. Add milk. Mix, then add salt and flour. Mix well.

Next add coconut, lime peel and lime juice. Mix until blended.

On cookie sheet, drop dough by rounded tablespoonfuls about 2 inches apart. Bake 10-12 minutes or until edges are browned. Do not cook until the cookie turns brown - just until the edges turn a golden brown or a little darker. Remove from cookie sheet to cooling rack.

Sprinkle about 1/8 tsp powdered sugar on each cookie. Enjoy!
