1
Preparation: Separate the broccoli into florets.
-
2
Cut the mushrooms into bite-size pieces.
-
3
Cut the bacon into 1 cm wide strips.
-
4
Boil plenty of water in a large pot, and add a generous amount of salt (not included in the recipe).
-
5
Parboil the broccoli until a bit firm.
-
6
Do not cook too long.
-
7
Remove the broccoli, and cook the pasta.
-
8
Cook 1 minute less than package instructions.
-
9
That's the key.
-
10
Heat the garlic oil in a frying pan, and stir-fry the bacon.
-
11
When lightly cooked, add the mushrooms, and stir-fry briefly.
-
12
Season with the salt, pepper, and wine.
-
13
Scoop out 2 ladlefuls of pasta cooking water, and pour into the pan.
-
14
Add the precooked broccoli, and toss briefly.
-
15
Add the freshly cooked pasta, and mix well.
-
16
Please taste at this point; if it's not flavourful, adjust with salt and pepper.
-
17
Please do not stir-fry too long after adding the pasta.
-
18
Just mix with the ingredients and the sauce, then enjoy it (This will prevent the pasta from drying out.)
-
19
This time, it was the perfect amount for 2 adults and 2 children.
-
20
If it's only for adults, the yield would be 3 servings.
-
21
When you do not have garlic oil, you can substitute with olive oil (or vegetable oil), and 1 clove of sliced garlic stir-fried until fragrant.
-
22
Broccoli will absorb the flavour better than pasta.
-
23
It might be better to add pasta first, then add broccoli last.
