Beat butter, sugars and vanilla extract in a large bowl with an electric mixer until pale and creamy. Stir in sifted flour and poppy seeds in 2 batches. Cover and refrigerate 30 mins.

Roll dough between sheets of parchment paper until 1/4-inch thick. Using a large heart cutter, cut 32 hearts from dough. Place hearts about 1 1/2 inches apart on prepared pans. Using small heart cutter, cut centers out of 16 large hearts.

Bake whole hearts about 10 mins and the remaining hearts about 8 mins. Cool in pans 2 mins. Remove from pans; cool completely on wire rack.
