Lemon-Honey Grilled Chicken

   Use kitchen shears or sharp knife to spatchcock chicken.

   Open chicken butterfly style; place, cut side down, in large shallow baking dish.

   Mix next 3 ingredients until blended; pour half over chicken.

   Refrigerate 1 hour to marinate.

   Add honey to remaining lemon mixture; set aside.

   Heat grill to medium heat.

   Remove chicken from marinade; discard marinade.

   Place chicken, skin side down, on grill grate; cover.

    Grill 1 hour 20 min.

    or until done (165F), turning after 20 min.

    and brushing occasionally with remaining lemon mixture for the last 15 min.

    Remove chicken from grill; sprinkle with cheese.
