Prepare a medium-hot fire in a charcoal grill or preheat a gas grill to medium-high.

To make marinade: In a small bowl, whisk together the olive oil, lemon juice, garlic, salt and pepper to taste. Place the salmon in a baking dish. Add the marinade and turn the salmon to coat all sides.

To grill salmon, brush grill grate with vegetable oil. Place salmon, skin side up, directly over the medium-hot fire. Cover the grill and cook on one side until beautiful grill marks are etched across fillets, about 4 minutes. Turn over and cover again. Cook until salmon is almost opaque throughout, but still very moist, or an instant-read thermometer inserted in the center registers between 125 and 130 degrees f., about 5 minutes more.
