Put a layer of foil in an oven safe dish, grease with some olive oil

Put fillets on foil and rub with other ingredients. Place small chunks of butter on the fish if it is not soft enough to rub. (If you are sensitive to garlic,, put garlic cloves loose in between fish instead of rubbing in crushed garlic. This way the fish still gets some garlic flavor and you can just take out the pieces after cooking.

Fold sides of foil inwards and a bit over the fish to create a sort of pocket. This will keep the sauces and butter closer to the fish and it will steam it a little. Drizzle some fresh lemon juice over fish.

Bake in pre-heated oven of 180 -200 degrees C for about 10 min or until fish is just done.

Serve with mixed steamed vegetables for a low-carb meal or have it with some peas and rice.
