Lemon Chicken With Rice

   Season the chicken with the salt and pepper. Saute over medium heat until cooked through (or, gently poach until cooked).

   1. Rinse rice under water.

   2. Combine with chicken broth and lemon juice in a medium pot.

   3. Bring to a boil, then reduce heat to lowest setting. Let simmer for about 20 minutes or until all the liquid is absorbed. Add water if needed.

   1. Melt the butter in a saucepan over medium-low heat.

   2. Add the flour and whisk into the butter, breaking up any clumps.

   3. Add the chicken stock, whisking. Bring to a boil, then simmer about 10 minutes.

   4. Add the milk, nutmeg, cayenne, 2 tablespoons of the lemon juice, and salt to taste. Bring to a boil and simmer an additional 5 minutes.

   When finished, slice the chicken and place on top of a bed of rice. Pour on the sauce!
