Leek and Potato Soup

   In a large saucepan, melt butter.

   Add leeks, cover and cook over medium heat for 3 minutes.

   Uncover, raise heat and cook, 3 minutes longer.

   Add chicken broth, mashed potatoes, and 1 1/2 cups water.

   Cover and bring to a boil over high heat; reduce heat to medium and cook uncovered until potatoes are smooth, about 8 minutes.

   Stir in cream, nutmeg and pepper.

   Cook over medium high until hot.
