Layered Meatloaf (Mexican)

   Preheat oven to 350 and set out 1 loaf pan

   Hold the cheese and hamburger meat in reserve

   Mix remaining ingredients in a large mixing bowl

   Add hamburger meat to mixture and blend thoroughly

   Layer 1/2 of the meat mixture on the bottom of the pan

   Layer cheese over the meat

   Layer the remaining meat mixture on top

   Cook on 350 for 1 1/2 hours (cook times may vary)

   Remove from oven and cover with a layer of cheese

    Cook for another 5-10 minutes

    Remove from oven and let cool 5-10 minutes before cutting

    Serve slices over tortilla chips and topped with sour cream, shredded lettuce and diced tomatoes

    Suggested sides: avocado slices, refried beans, spanish rice
