Preheat your oven to 180C .

Using an ovenproof bag , if possible , if not use a clip lock bag , place all the above ingredient into the bag , except the chicken and the oil , and shake to combine all well .

Now add the chicken pieces , into the season mix filled bag , and shake them all around so to coat all the pieces evenly and well .

Now tie the end up , or seal clip lock bag seal , to seal it all up , then set aside for 5 minutes .

Using a baking tray , place the oven proof bag onto the baking tray , spread out in the bag on the tray , so they cook evenly , and place the baking tray into the oven and cook for 30 minutes , until they feel quite tender , after the 30 minutes , remove the chicken pieces from the baking tray and drizzle the oil onto the hot baking tray , then open the chicken filled bag , discard bag and place the chicken pieces , spread out , onto the oiled baking tray and place the baking tray back into the oven and cook for a further 10-15 minutes or until cooked through golden tender .

If using a clip lock bag , drizzle the oil onto the baking tray then remove the chicken pieces from the clip lock bag , discard bag and spread out chicken pieces on prepared oiled baking tray so they cook evenly then place prepared chicken filled baking tray into the Preheated oven and cook for 40-45 minutes or until golden tender and cooked through .

Once cooked , remove from heat , serve on a serving plate with some pirri pirri sauce , yogurt , rice or sides of your choice , serve hot and enjoy .

NOTE : seasoning mixture can be made up , mixed and stored in the clip lock bag or airtight container , in the pantry , for several months .
