Place the bacon slices into a heavy based saucepan and spread the onions , carrots and mushrooms over the bacon then add the meat and season with salt and pepper .

Cover the saucepan with lid and cook over low heat for half hour , turning the meat several times in the process .

Next add the beer , recover and cook for a further 2 and a half hours longer , once cooking time is up remove the meat from the pot and set aside for a minute .

Mix the flour and water to smooth paste type and stir flour mix into the Braising mixture until it thickens a little to for a gravy .

Return the meat to the pot and cook for a further 5 minutes to thicken the gravy and bring it all together .

Once done remove from heat , slice the meat or leave whole if preferred and serve with the gravy poured over .
