La Surena Chicken Tenders With Wild Mushrooms

   Preheat the oven to 50 degrees Celsius.

   Spread the mushrooms on a baking sheet and placed in the oven for up to 10 hours to dry them out.

   Once they are dry, grind them in a mortar or food processor until they become powder.

   In a bowl, mix equal parts mushroom powder and breadcrumbs.

   Cut the chicken into pieces, season with salt and pepper.

   In a bowl mix the egg and water. Coat the chicken pieces in the egg mixture, and then dredge in the breadcrumb mixture.

   Fry the chicken in a deep fryer or skillet at 180 C until the chicken is browned and cooked through.

   Serve with the desired sauce.
