1 starchy potato, peeled and thinly sliced
2 cloves garlic
Coarse salt

2 tablespoons red wine vinegar

1 small head radicchio, chopped

Cook potatoes in boiling water 6 to 7 minutes until tender, drain, scatter across a large flat surface to cool and dry, 5 minutes.
