Process graham crackers and sugar in a food processor until finely crushed. Add butter and process until combined. Press into base and 3/4 of the way up the side of prepared pan. Chill for 10 mins. Bake for 10 mins, or until golden brown.

Meanwhile, whisk together whole eggs, yolks and lime zest for 2 mins, until light and creamy. Add condensed milk, lime juice and heavy cream. Whisk for 1 min, until combined. Transfer to prepared pan and bake for 45 mins, or until just set at center.

Let cool in pan for 1 hour. Chill for 2 hours. Serve topped with lime slices and whipped cream.
