To Make the Kale with a Kick:

Remove stems and ribs from kale.

Clean thoroughly and chop into tiny pieces.

Lightly coat a large bowl with the oil.

Place the dough in the bowl and gently turn to coat.

Gently deflate the dough.

Divide into 8 equal portions; shape into rounds by pulling at the dough from the sides onto the bottom.

Insert your thumb into the center of each dough ball, and twirl the dough around it until the hole reaches about 1 1/2 inches (8 cm) in size.

Bring the water to a boil in a large pot.

Add the baking soda slowly: the mixture will bubble up.

Lower the heat to a gentle boil.

Preheat the oven to 375F (190C, or gas mark 5).

Line 2 large baking sheets with parchment paper or silicone baking mats.
