Start by washing and drying the parsley and adding it to the food processor.

Pulse about 10 times until the parsley is nice and chopped.

Remove the parsley into a bowl and set aside.

Next, add the lemon peel and the salt into the processor.

Pulse until the lemon is chopped, about 15 pulses, maybe a little more.

This will take a little time.

Now, while the food processor is on, add the cloves of garlic.

Pulse until the garlic is finely chopped.

Add the garbanzo beans, tahini, cumin, lemon juice and water to the food processor (with the garlic, salt and lemon).

Put the food processor to the ON setting and let it run for a good 3 minutes.

After the 3 minutes, turn the food processor off and scrape the sides.

Turn the food processor back on and drizzle in 2-3 tablespoons of olive oil.

I used 3, because after 2, it still seemed a little stiff.

Let it run for another minute or so.

Add the parsley back into the hummus and pulse about 10 times until it is incorporated into the hummus.

Make sure you like the texture.

If you want a little looser hummus, add more water until desired texture.

Serve with veggies, pita bread, as a sandwich spread, on a salad, or just eat on a piece of toast!
