Take the seeds out of the kabocha squash.

Finely slice the onion, massage with a little salt, rinse in water and squeeze out the excess moisture.

Cut the kabocha squash up into small pieces, and take the rind off.

Put the cut up kabocha into a microwave safe plastic container, cover with water then drain, and microwave for 4 minutes.

Cook until a chopstick goes through a piece easily.

Mash the kabocha squash up with a spoon and add the onion and mayonnaise and mix while it's still hot.

Add the cheese before the kabocha squash cools down and mix well.

Season with salt and pepper.
