Place a baking sheet in the oven and heat to the very lowest - 180 or 200. Heat a large nonstick skillet to medium. Form the sausage into 4 patties (1/4 lb seems like a lot but chorizo releases a LOT of fat) and cook them until they are nice and brown on both sides - 4-5 minutes per side.

While the sausage cooks, whisk together the cornmeal, baking powder, and maple sugar. Pour the boiling water into the bowl and mix, then whisk in the buttermilk and 1 egg until it's all just uniformly mixed.

When the sausage patties are cooked put them on a paper towel to drain and onto the sheet in the oven. Drain off most of the fat and add a pat of butter to the pan.

Cook the johnny cakes - scoop 1/4 cup batter into the pan for each one and cook until golden on each side - 3-4 minutes per side. As they finish cooking, move the to the oven. Ypu need 8 johnny cakes, and you may have a bit of batter left over.

Add a bit more butter to the pan. Fry the remaining eggs - we cooked them over medium because much as we love a runny yolk, that's not the best thing for on-the-go possibly eating and driving and doing several other things at the same time. Pepper the eggs to suit your taste. When you flip the eggs, lay a slice of cheese on top of each one.

Assembly - lay a sausage patty on top of each of 4 johnny cakes. Top each of those with an egg, then another cake. Wrap in parchment or foil to-go, and dash out the door to your busy day!
