Cook pasta according to package directions.

While pasta is cooking, in a fry pan, add salami and cook over medium heat until it gets a bit crispy on the outside.

In a large skillet with deep sides heat pan over medium heat.

Add oil and garlic.

Cook garlic 30 seconds.

Add flour and stir cooking another minute.

Whisk in whole milk and keep whisking to prevent lumps.

Once thickened, add cheeses and spices.

Reduce heat to low.

You are looking for a nice creamy, cheesy consistency.

If it is too thick, add an additional 1/4 cup of milk until you reach desired results.

Pasta should be ready, so when it is, drain and add to cheeses.

Stir in salami now too.

If you do want a crispy topping you can mix 4 tablespoons of melted butter to 1 cup panko bread crumbs or crushed buttery crackers.

Sprinkle on top and bake uncovered in a 375F oven for 20 minutes.
