Fry up the bacon until it's crispy, then crumble it. Use the bacon drippings to cook the chopped onions and mushrooms.

While that cooks, set the oven to 350 degrees. Blend the egg, bread crumbs, herbs and cheeses in a large bowl until thoroughly mixed. Add the ground beef, then add the cooked onions and mushrooms (it doesn't matter if this is still hot).

Scoop the meat mixture into an ungreased cupcake pan and stick it in the oven for 15-20 mins (or until the centers are 160 degrees).

They'll have cooked in their own juice/grease, so scoop them out of the cupcake pan as soon as they come out of the oven to keep the fat from settling back into the meat.
