Ingredients: 8 thin chicken breasts; 1 cup breadcrumbs; ½ cup parmesan cheese; 2 eggs, slightly beaten; 1 cup chopped onion; 1 large garlic clove, minced; 2 tablespoons olive oil; 1 (1 lb) can tomatoes; 2 (8 ounce) cans tomato sauce; 1 ½ teaspoons basil; 1 ½ teaspoons thyme; salt & pepper; 2 tablespoons olive oil (don't substitute); 2 tablespoons butter; 8 slices mozzarella cheese; ½ cup freshly grated parmesan cheese

8 thin chicken breasts
1 cup breadcrumbs
½ cup parmesan cheese
2 eggs, slightly beaten
1 cup chopped onion
1 large garlic clove, minced
2 tablespoons olive oil
1 (1 lb) can tomatoes
2 (8 ounce) cans tomato sauce
1 ½ teaspoons basil
1 ½ teaspoons thyme
salt & pepper
2 tablespoons olive oil (don't substitute)
2 tablespoons butter
8 slices mozzarella cheese
½ cup freshly grated parmesan cheese

Mix breadcrumbs and 1/4 c Parmesan cheese in shallow plate.

Salt & pepper chicken.
