1 12 kg potatoes
100 g butter
100 g parmesan cheese, grated
100 g pecorino cheese, grated
4 tablespoons milk
120 g ham, cubed
250 g mozzarella cheese
1 tablespoon parsley, chopped
1 tablespoon basil
4 egg yolks
2 egg whites
½ cup breadcrumbs

Cook the potatoes.

Mash them, add parmesan, pecorino, butter and milk.

Mix ham with egg yolks, parsley and basil and mix through the potato mash.

Beat the egg whites until stiff and spoon through the mash.

Butter a cake pan and sprinkle with breadcrumbs.

Spoon half of the puree in the pan.

Make a hole in the middle of the mash, put mozarella slices into it.
