Hammer chicken lightly until 1/3-inch thick. Mix egg, pepper and salt. After you dipped the chicken breast in egg mixture you then roll it in bread crumbs. Heat oil in a skillet until it is hot. Brown chicken (both sides).

Place chicken into a shallow baking dish.

Pour away remaining oil from skillet. Mix tomato sauce, garlic and basil in a frying pan. Bring to a boil and let it simmer for 10 minutes. Stir in butter or margarine.

Pour sauce over chicken. Scatter parmigiana /Parmesan cheese over sauce; cover dish and bake at 350 degrees for half an hour (30 minutes).

Put mozzarella slices on chicken and bake until cheese is melted (approx. 10 minutes).
