   Add vegetables to a pan or slow cooker.

   I used an 8 in 1 and set at 140A

   Pour on water, crumble stock cube & add spices.

   Stir, lid and cook on medium for about 30+ minutes until veg is soft.

   When veg is soft use a stick blender being careful & blend until smooth.

   Add coconut milk & blend in.

   Divide into dishes or put into containers, cool, lid and keep in the fridge for 4-5 days.
