2 pieces Chicken Breast Cubed (optional)
1 cup Sliced/chopped Onion
1 cup Corn
1 cup Thinly Sliced Carrots
1 cup Slice Green Onions (scallions)
1 cup Chopped Fresh Cilantro
1 cup Cashews
1 can Diced Mild Green Chilis/jalapenos (small Can, Drained)
1 Tablespoon Sesame Oil
1 Tablespoon Ground Turmeric
1 teaspoon Ground Coriander
1 teaspoon Ground Cumin
1/4 teaspoons Ground Cinnamon
1 dash Ground Clove
Salt And Black Pepper To Taste

Prepare all veggies, and if using, chicken.

In a large skillet, heat oil. If using chicken, cook now and remove to a plate.

Add onion and carrots, stir-fry.

Once onions begin to turn translucent, add corn and cashews. Toast lightly.

When ready, add chilis/jalapenos and cilantro. Heat through.

Add spices and mix thoroughly.

Add rice and mix again.

Take off heat and stir in green onions immediately before serving.
