Hummus Chicken

   Chop carrots and onion.

   Toss carrots, broccoli, and onion with olive oil in a large bowl.

   Season with salt and pepper.

   Season chicken with a few dashes of salt and pepper.

    Spray large 9x13 baking dish with cooking spray.

    Place vegetables in baking dish in one even layer.

    Lay the chicken on top of the vegetables.

    Spoon hummus on top of each chicken tenderloin and coat evenly.

    Squeeze the juice of the lemon over the chicken and vegetables.
