How to Make Shredded White Leek

   Cut the white part of the Japanese leek into 5 cm long lengths.

   Cut slits into the leeks, then remove the green cores.

   Finely chop the white parts.

   Let rest in cold water for about 10 minutes.

   Drain well in a sieve.

   Done.

   Cut as-is, vertically.
