Hot Potato Salad

   Heat oven to 425u00b0. Spray a cookie sheet with cooking spray and place the diced potatoes in a single layer (try to keep the skins facing down). Roast until fork-tender and lightly brown; hard to give a time, depending on the thickness of the potatoes. You can do this in batches if necessary for space. Place cooked potatoes in a large bowl. Add in cooked eggs, sliced scallions and bacon. Mix well and add salt and pepper to taste. Add in Miracle Whip to desired consistency. Serve warm or at room temperature.
