1. Mix the warm milk, dried yeast and sugar in a bowl.

2. Put the bowl aside for 10 min or until the mixture becomes frothy.

3. Add cold milk, sugar and butter to the mixture and stir.

4. Mix the flour, spice and sultanas to the mixture in another bowl.

5. Make a well in the centre of the dry mixture and pour the frothy mixture into the hole.

6. Stir the mixtures until a sticky dough is formed.

7. Sprinkle flour over a board and pull the dough onto it.

8. Knead the dough for 10-15 min and re-flour board if the dough is too sticky.

9. Place the dough in a butter-sprayed bowl and cover it with cling wrap. Leave it for 1hr 30 min.

10. Put the dough onto a floured board and punch a well in the middle. Knead for 3-4 min.

11. Break off small parts of the dough and place it onto a buttered baking tray next to each other. Cover it with a clean tea-towel and leave it for 30 min.

12. Mix the flour and water in a bowl until there is a toothpaste-like consistency. Preheat oven at 160C.

13. Put the mixture in a piping bag and make crosses onto the buns.

14. Bake the buns for 10 min or less at 200C fan-forced.
