Bring orange zest, orange juice, 1/4 cup sugar and 1/2 cup water to a boil. Reduce heat and simmer for 2 mins. Add cherries and return to a boil. Reduce heat and simmer, covered, for 2 mins. Remove from heat and stir in liqueur. Let cool.

Preheat oven to 400u00b0F. Grease 6 - 4 oz souffle dishes and sprinkle with sugar, shaking out any excess.

Place chocolate in large heatproof bowl over a double boiler and stir until melted. Let cool for 5 mins then stir in egg yolks. Whip egg whites and remaining sugar to soft peaks then fold into chocolate mixture. Distribute between prepared souffle dishes and transfer to a baking tray. Bake for 10 mins.

Dust with powdered sugar. Serve immediately with poached cherries and ice cream.
